- Long-grain rice - 150 grams
- Extra virgin olive oil - 3 tablespoons
- Onion - 1 small, finely chopped
- Tomato - 1 medium, diced
- Vegetable broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced tomato to the saucepan and cook for another 3-4 minutes until softened.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and vegetables for about 2 minutes.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes until the rice absorbs the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, stir in the chopped parsley and lemon juice, and serve warm.
