Ingredients

  • Long-grain rice - 150 grams
  • Extra virgin olive oil - 3 tablespoons
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced tomato to the saucepan and cook for another 3-4 minutes until softened.
  4. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the oil and vegetables for about 2 minutes.
  5. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes until the rice absorbs the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, stir in the chopped parsley and lemon juice, and serve warm.
