Ingredients

  • Long-grain rice - 150 grams

  • Garlic (minced) - 2 cloves
  • Carrot (grated) - 1 medium
  • Green bell pepper (chopped) - 1/2 medium
  • Tomato (diced) - 1 medium
  • Vegetable broth - 400 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the grated carrot and chopped green bell pepper to the saucepan, sautéing for 3-4 minutes until softened.
  5. Stir in the diced tomato, salt, black pepper, and dried thyme, cooking for another 2 minutes.
  6. Add the rinsed rice to the saucepan and stir well to coat the rice with the vegetable mixture.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove from heat, add the lemon juice, and fluff the rice with a fork. Garnish with fresh parsley before serving.
