- Long-grain rice - 150 grams

- Garlic (minced) - 2 cloves
- Carrot (grated) - 1 medium
- Green bell pepper (chopped) - 1/2 medium
- Tomato (diced) - 1 medium
- Vegetable broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Rinse the rice under cold water until the water runs clear, then drain and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the grated carrot and chopped green bell pepper to the saucepan, sautéing for 3-4 minutes until softened.
- Stir in the diced tomato, salt, black pepper, and dried thyme, cooking for another 2 minutes.
- Add the rinsed rice to the saucepan and stir well to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat, add the lemon juice, and fluff the rice with a fork. Garnish with fresh parsley before serving.
