- Long-grain rice - 150 grams
- Extra virgin olive oil - 3 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable broth - 300 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch. Soak the rice in warm water for about 15 minutes, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot and green bell pepper, sautéing for about 5 minutes until softened.
- Mix in the diced tomato, salt, and black pepper, cooking for an additional 2-3 minutes.
- Add the drained rice to the pan, stirring well to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15-18 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then stir in the chopped parsley and lemon juice before serving.
