Ingredients
- Leeks - 300 grams (about 3 medium leeks)
- Olive oil - 3 tablespoons
- Carrot - 1 medium, grated
- Tomato - 1 medium, diced
- Garlic - 1 clove, minced
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 100 ml (approximately 1/2 cup)
Steps
- Trim the roots and dark green tops of the leeks, then slice them in half lengthwise and rinse thoroughly under cold water to remove any dirt.
- Cut the cleaned leeks into 2-3 cm pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the grated carrot and the leeks to the skillet. Sauté for about 5-7 minutes until the leeks start to soften.
- Stir in the diced tomato, fresh dill, salt, and black pepper. Mix well.
- Pour in the water, cover the skillet, and let it simmer on low heat for about 15-20 minutes until the leeks are tender.
- Remove the skillet from heat and allow it to cool slightly before serving.
