Ingredients

  • Leeks - 300 grams (about 3 medium leeks)
  • Olive oil - 3 tablespoons
  • Carrot - 1 medium, grated
  • Tomato - 1 medium, diced
  • Garlic - 1 clove, minced
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 100 ml (approximately 1/2 cup)

Steps

  1. Trim the roots and dark green tops of the leeks, then slice them in half lengthwise and rinse thoroughly under cold water to remove any dirt.
  2. Cut the cleaned leeks into 2-3 cm pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the grated carrot and the leeks to the skillet. Sauté for about 5-7 minutes until the leeks start to soften.
  5. Stir in the diced tomato, fresh dill, salt, and black pepper. Mix well.
  6. Pour in the water, cover the skillet, and let it simmer on low heat for about 15-20 minutes until the leeks are tender.
  7. Remove the skillet from heat and allow it to cool slightly before serving.
