  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, salt, black pepper, and paprika to create a marinade.
  3. Place the sea bass fillets in a baking dish and pour half of the marinade over them, ensuring they are well coated.
  4. In another bowl, combine the sliced red bell pepper, zucchini, and halved cherry tomatoes. Drizzle with the remaining marinade and toss to combine.
  5. Arrange the marinated vegetables around the sea bass in the baking dish.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the fish is cooked through and flaky.
  8. Garnish with fresh parsley before serving.
