Ingredients

  • Lamb shoulder - 300 grams, cut into chunks
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, sliced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 milliliters

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the lamb chunks to the pot and brown them on all sides, about 8-10 minutes.
  5. Incorporate the sliced carrot, diced zucchini, and bell pepper, stirring well.
  6. Add the chopped tomato, salt, black pepper, and lemon juice, mixing everything together.
  7. Pour in the water, bring to a boil, then reduce the heat to low.
  8. Cover the pot and let it simmer for about 40 minutes, or until the lamb is tender.
  9. Once cooked, stir in the fresh parsley and adjust seasoning if necessary.
  10. Serve warm, drizzled with additional olive oil if desired.
