Ingredients
- Lamb shoulder - 300 grams, cut into chunks
- Olive oil - 4 tablespoons

- Carrot - 1 medium, sliced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 milliliters
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the lamb chunks to the pot and brown them on all sides, about 8-10 minutes.
- Incorporate the sliced carrot, diced zucchini, and bell pepper, stirring well.
- Add the chopped tomato, salt, black pepper, and lemon juice, mixing everything together.
- Pour in the water, bring to a boil, then reduce the heat to low.
- Cover the pot and let it simmer for about 40 minutes, or until the lamb is tender.
- Once cooked, stir in the fresh parsley and adjust seasoning if necessary.
- Serve warm, drizzled with additional olive oil if desired.
