Ingredients

  • Dry white beans - 150 grams
  • Olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red bell pepper - 1/2, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Water - 500 milliliters
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the dry white beans under cold water and soak them in water overnight, or for at least 8 hours.
  2. After soaking, drain and rinse the beans again, then place them in a pot with fresh water. Bring to a boil and cook for 30 minutes until slightly tender. Drain and set aside.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
  5. Stir in the diced tomato and red bell pepper, cooking until the vegetables soften, about 5 minutes.
  6. Add the pre-cooked beans, salt, black pepper, paprika, and water. Stir well and bring to a gentle simmer.
  7. Cover the pot and let it cook for about 30-40 minutes, stirring occasionally, until the beans are fully tender and the flavors are well combined.
  8. Once cooked, stir in the lemon juice and adjust seasoning if necessary. Serve warm or at room temperature, garnished with fresh parsley.
