Ingredients
- Dry white beans - 150 grams
- Olive oil - 4 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Red bell pepper - 1/2, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Water - 500 milliliters
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the dry white beans under cold water and soak them in water overnight, or for at least 8 hours.
- After soaking, drain and rinse the beans again, then place them in a pot with fresh water. Bring to a boil and cook for 30 minutes until slightly tender. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
- Stir in the diced tomato and red bell pepper, cooking until the vegetables soften, about 5 minutes.
- Add the pre-cooked beans, salt, black pepper, paprika, and water. Stir well and bring to a gentle simmer.
- Cover the pot and let it cook for about 30-40 minutes, stirring occasionally, until the beans are fully tender and the flavors are well combined.
- Once cooked, stir in the lemon juice and adjust seasoning if necessary. Serve warm or at room temperature, garnished with fresh parsley.
