Ingredients
- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 small red bell pepper - diced
- 1 small green bell pepper - diced
- 1 small onion - finely chopped
- 100 grams mushrooms - diced
- 100 grams peas (fresh or frozen)
- 2 cloves garlic - minced
- 1 teaspoon dried oregano
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them several times with a fork. Rub them with a little olive oil and sprinkle with salt.
- Wrap each potato in aluminum foil and place them on a baking tray. Bake in the preheated oven for about 45-50 minutes, or until they are tender.
- While the potatoes are baking, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent.
- Add the diced red and green bell peppers, and mushrooms to the skillet. Sauté for about 5-7 minutes until they start to soften.
- Stir in the peas, minced garlic, dried oregano, salt, and black pepper. Cook for an additional 3-5 minutes, then remove from heat.
- Once the potatoes are done, carefully unwrap them and cut a slit down the center of each potato, being careful not to cut all the way through.
- Gently fluff the insides of the potatoes with a fork and drizzle with the remaining tablespoon of olive oil.
- Spoon the vegetable mixture into each potato, generously filling them.
- Garnish with fresh parsley before serving.
