Ingredients

  • Celery root - 300 grams
  • Carrot - 1 medium (about 100 grams)
  • Potato - 1 medium (about 150 grams)
  • Onion - 1 small (about 50 grams)
  • Garlic - 2 cloves
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 300 ml

Steps

  1. Peel and chop the celery root, carrot, and potato into bite-sized cubes.
  2. Finely chop the onion and garlic.
  3. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the celery root, carrot, and potato to the pot. Stir well to coat the vegetables with oil.
  5. Season with salt and black pepper, then pour in the water and lemon juice. Bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the vegetables are tender.
  7. Once cooked, remove from heat and stir in the fresh dill before serving.
