- Zucchini - 400 grams
- Extra virgin olive oil - 4 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 ml
- Lemon juice - 1 tablespoon
Steps
- Wash the zucchini and cut them into half-moon slices.
- In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent.
- Add the minced garlic to the pan and cook for an additional 1 minute until fragrant.
- Stir in the diced tomato and cook for about 3-4 minutes until the tomato softens.
- Add the zucchini slices to the pan, followed by the salt, black pepper, and water. Stir well to combine.
- Cover the saucepan and reduce the heat to low. Simmer for about 15-20 minutes, or until the zucchini is tender.
- Once cooked, remove from heat and stir in the fresh dill and lemon juice before serving.
