  • Zucchini - 400 grams
  • Extra virgin olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 100 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Wash the zucchini and cut them into half-moon slices.
  2. In a medium saucepan, heat the olive oil over medium heat and add the chopped onion. Sauté until the onion is translucent.
  3. Add the minced garlic to the pan and cook for an additional 1 minute until fragrant.
  4. Stir in the diced tomato and cook for about 3-4 minutes until the tomato softens.
  5. Add the zucchini slices to the pan, followed by the salt, black pepper, and water. Stir well to combine.
  6. Cover the saucepan and reduce the heat to low. Simmer for about 15-20 minutes, or until the zucchini is tender.
  7. Once cooked, remove from heat and stir in the fresh dill and lemon juice before serving.
