- Fine bulgur - 100 grams
- Hot water - 200 ml

- Red bell pepper - 1 small, finely chopped
- Green onion - 2, finely sliced
- Fresh parsley - 30 grams, finely chopped
- Fresh mint - 15 grams, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate molasses - 1 tablespoon (optional)
Steps
- In a bowl, combine the fine bulgur and hot water, cover, and let it sit for 15 minutes until the bulgur absorbs the water and becomes tender.
- Fluff the bulgur with a fork to separate the grains.
- Add the chopped tomato, cucumber, red bell pepper, green onion, parsley, and mint to the bulgur.
- In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses if using.
- Pour the dressing over the bulgur salad and mix well to combine all ingredients.
- Taste and adjust seasoning if necessary. Let it rest for 10 minutes before serving to enhance the flavors.
