Ingredients

  • Fine bulgur - 100 grams
  • Hot water - 200 ml
  • Tomato - 1 medium, finely chopped
  • Cucumber - 1 medium, finely chopped
  • Red bell pepper - 1 small, finely chopped
  • Green onion - 2, finely sliced
  • Fresh parsley - 30 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pomegranate molasses - 1 tablespoon (optional)

Steps

  1. In a bowl, combine the fine bulgur and hot water, cover, and let it sit for 15 minutes until the bulgur absorbs the water and becomes tender.
  2. Fluff the bulgur with a fork to separate the grains.
  3. Add the chopped tomato, cucumber, red bell pepper, green onion, parsley, and mint to the bulgur.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, black pepper, and pomegranate molasses if using.
  5. Pour the dressing over the bulgur salad and mix well to combine all ingredients.
  6. Taste and adjust seasoning if necessary. Let it rest for 10 minutes before serving to enhance the flavors.
