- Fresh spinach - 300 grams
- Extra virgin olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Water - 100 milliliters
- Pine nuts - 2 tablespoons (optional)
Steps
- Rinse the fresh spinach thoroughly and remove any tough stems. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant, but do not allow it to brown.
- Add the diced tomato, salt, black pepper, and red pepper flakes (if using). Cook for about 5 minutes until the tomatoes start to soften.
- Add the spinach to the skillet and stir well to combine. Pour in the water and cover the skillet. Let it cook for about 10 minutes, stirring occasionally, until the spinach is wilted and tender.
- Remove from heat and stir in the lemon juice. If desired, toast the pine nuts in a dry skillet until golden and sprinkle them on top before serving.
