Steps
- Peel and slice the carrots into thin rounds.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the sliced carrots to the saucepan and stir well to coat them with olive oil.
- Season with salt and black pepper, then pour in the water and lemon juice.
- Cover the saucepan and reduce the heat to low, allowing the carrots to simmer for about 20 minutes, or until they are tender.
- Once cooked, remove from heat and stir in the chopped parsley.
