- Artichoke hearts (canned or frozen) - 200 grams
- Olive oil - 3 tablespoons
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Vegetable broth - 400 milliliters
- Fresh dill (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the minced garlic to the onions and sauté for an additional minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the oil and onion mixture.
- Pour in the vegetable broth, add the artichoke hearts, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes.
- After 15 minutes, turn off the heat and let the rice sit covered for another 5 minutes to finish steaming.
- Fluff the rice with a fork and gently mix in the chopped dill and lemon juice before serving.
