  • Basmati rice - 150 grams
  • Artichoke hearts (canned or frozen) - 200 grams
  • Olive oil - 3 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Vegetable broth - 400 milliliters
  • Fresh dill (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic to the onions and sauté for an additional minute until fragrant.
  4. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the oil and onion mixture.
  5. Pour in the vegetable broth, add the artichoke hearts, salt, and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15 minutes.
  7. After 15 minutes, turn off the heat and let the rice sit covered for another 5 minutes to finish steaming.
  8. Fluff the rice with a fork and gently mix in the chopped dill and lemon juice before serving.
