  • Carrot - 1 medium, sliced
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 1 cup

Steps

  1. In a pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  3. Add the sliced carrot and cook for another 3-4 minutes until slightly softened.
  4. Place the halved artichokes in the pot, cut side down, and pour in the lemon juice, salt, and black pepper.
  5. Add the water, cover the pot, and let it simmer for about 20 minutes until the artichokes are tender.
  6. Once cooked, remove from heat and stir in the chopped dill.
  7. Serve warm or at room temperature, drizzled with extra olive oil if desired.
