- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 1 cup
Steps
- In a pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the sliced carrot and cook for another 3-4 minutes until slightly softened.
- Place the halved artichokes in the pot, cut side down, and pour in the lemon juice, salt, and black pepper.
- Add the water, cover the pot, and let it simmer for about 20 minutes until the artichokes are tender.
- Once cooked, remove from heat and stir in the chopped dill.
- Serve warm or at room temperature, drizzled with extra olive oil if desired.
