- Chickpeas - 200 grams
- Red bell pepper - 1, finely chopped
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Tahini - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- In a food processor, combine the chickpeas, red bell pepper, red onion, garlic, parsley, mint, cumin, paprika, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.
- Form the mixture into two patties, about 1.5 cm thick.
- Brush each patty with olive oil on both sides and place them on a baking sheet lined with parchment paper.
- Bake the patties in the preheated oven for 20 minutes, flipping halfway through, until they are golden and slightly crispy.
- While the patties are baking, prepare the burger buns by lightly toasting them in a pan or oven.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the baked patty, sliced tomato, and cucumber.
- Drizzle tahini over the top and close the burger with the other half of the bun.
