- All-purpose flour - 250 grams
- Warm water - 150 ml
- Olive oil - 2 tablespoons
- Instant yeast - 7 grams
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Black olives, pitted and chopped - 100 grams
- Green olives, pitted and chopped - 50 grams
- Cherry tomatoes, halved - 100 grams
- Fresh parsley, chopped - 2 tablespoons
- Dried oregano - 1 teaspoon
- Black pepper - to taste
Steps
- In a large bowl, combine warm water, sugar, and instant yeast. Let it sit for 5-10 minutes until frothy.
- Add olive oil, salt, and flour gradually, mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions.
- Roll each portion into an oval shape about 1 cm thick and place them on a baking sheet lined with parchment paper.
- In a bowl, mix the chopped black and green olives, cherry tomatoes, parsley, oregano, and black pepper.
- Spread the olive mixture evenly over each pide, leaving a border around the edges.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve hot.
