Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Olive oil - 2 tablespoons
  • Instant yeast - 7 grams
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Black olives, pitted and chopped - 100 grams
  • Green olives, pitted and chopped - 50 grams
  • Cherry tomatoes, halved - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a large bowl, combine warm water, sugar, and instant yeast. Let it sit for 5-10 minutes until frothy.
  2. Add olive oil, salt, and flour gradually, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and divide it into two equal portions.
  7. Roll each portion into an oval shape about 1 cm thick and place them on a baking sheet lined with parchment paper.
  8. In a bowl, mix the chopped black and green olives, cherry tomatoes, parsley, oregano, and black pepper.
  9. Spread the olive mixture evenly over each pide, leaving a border around the edges.
  10. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  11. Remove from the oven, let cool for a few minutes, then slice and serve hot.
