Steps

  1. Wash the zucchinis and cut them into thin noodles using a spiralizer or a peeler.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1 minute.
  3. Add the zucchini noodles to the skillet and cook for 3-5 minutes, stirring frequently until slightly softened.
  4. Stir in the sliced black olives and halved cherry tomatoes, cooking for an additional 3-4 minutes until the tomatoes are tender.
  5. Season the mixture with dried oregano, salt, and black pepper to taste.
