- Black olives - 100 grams (pitted and chopped)
- Red onion - 50 grams (finely chopped)
- Fresh parsley - 30 grams (chopped)
- Garlic - 1 clove (minced)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Bread crumbs - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)

- Tomato - 1 medium (sliced)
- Lettuce leaves - 2
- Yogurt - 100 grams (for sauce)
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork until chunky.
- Add the chopped black olives, red onion, parsley, minced garlic, cumin, paprika, bread crumbs, egg, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties of equal size.
- Heat olive oil in a frying pan over medium heat. Fry the patties for about 5-7 minutes on each side until golden brown.
- While the patties cook, prepare the yogurt sauce by mixing yogurt with lemon juice and a pinch of salt.
- Toast the whole wheat buns lightly on a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the chickpea patty, sliced tomato, and a generous dollop of yogurt sauce.
- Top with the other half of the bun and serve hot.
