Ingredients

  • Fresh green beans - 200 grams
  • Extra virgin olive oil - 3 tablespoons
  • Medium onion - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Carrot - 1 medium, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 ml

Steps

  1. Wash the green beans and trim the ends.
  2. In a medium-sized pot, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for about 5 minutes until translucent.
  4. Stir in the minced garlic and sliced carrot, cooking for an additional 2 minutes.
  5. Add the diced tomatoes, salt, and black pepper, and cook for another 5 minutes until the tomatoes soften.
  6. Add the green beans and water to the pot, stirring to combine all ingredients.
  7. Cover the pot and reduce the heat to low. Simmer for about 15 minutes, or until the green beans are tender.
  8. Remove from heat and stir in the chopped parsley before serving.
