- Fresh green beans - 200 grams
- Extra virgin olive oil - 3 tablespoons
- Medium onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Carrot - 1 medium, sliced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 ml
Steps
- Wash the green beans and trim the ends.
- In a medium-sized pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and sliced carrot, cooking for an additional 2 minutes.
- Add the diced tomatoes, salt, and black pepper, and cook for another 5 minutes until the tomatoes soften.
- Add the green beans and water to the pot, stirring to combine all ingredients.
- Cover the pot and reduce the heat to low. Simmer for about 15 minutes, or until the green beans are tender.
- Remove from heat and stir in the chopped parsley before serving.
