Ingredients
- Cauliflower - 400 grams
- Extra virgin olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the cauliflower rice and cook for 2-3 minutes, stirring occasionally.
- Pour in the vegetable broth, salt, and black pepper. Bring to a simmer, then reduce the heat to low.
- Cover the saucepan and cook for about 10-15 minutes, or until the cauliflower is tender and the liquid is absorbed.
- Remove from heat and stir in the chopped parsley, dill, and lemon juice. Adjust seasoning if needed.
- Serve warm, garnished with additional herbs if desired.
