Ingredients

  • Cauliflower - 400 grams
  • Extra virgin olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Stir in the cauliflower rice and cook for 2-3 minutes, stirring occasionally.
  6. Pour in the vegetable broth, salt, and black pepper. Bring to a simmer, then reduce the heat to low.
  7. Cover the saucepan and cook for about 10-15 minutes, or until the cauliflower is tender and the liquid is absorbed.
  8. Remove from heat and stir in the chopped parsley, dill, and lemon juice. Adjust seasoning if needed.
  9. Serve warm, garnished with additional herbs if desired.
