- Leeks - 400 grams
- Carrots - 100 grams
- Potatoes - 150 grams

- Water - 250 milliliters
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
Steps
- Clean the leeks thoroughly, removing any dirt between the layers, and slice them into 1 cm rings.
- Peel and dice the carrots and potatoes into small cubes.
- In a large skillet, heat the olive oil over medium heat. Add the leeks and sauté for about 5 minutes until they are soft.
- Add the diced carrots and potatoes to the skillet, stirring well to combine.
- Pour in the water, lemon juice, salt, and black pepper. Bring to a gentle simmer.
- Cover the skillet and let it cook on low heat for about 25 minutes, or until the vegetables are tender.
- Once cooked, stir in the fresh dill and parsley, adjusting seasoning if necessary.
- Serve warm or at room temperature, drizzling with a little extra olive oil if desired.
