  • Carrots - 100 grams
  • Potatoes - 150 grams
  • Olive oil - 4 tablespoons
  • Water - 250 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Clean the leeks thoroughly, removing any dirt between the layers, and slice them into 1 cm rings.
  2. Peel and dice the carrots and potatoes into small cubes.
  3. In a large skillet, heat the olive oil over medium heat. Add the leeks and sauté for about 5 minutes until they are soft.
  4. Add the diced carrots and potatoes to the skillet, stirring well to combine.
  5. Pour in the water, lemon juice, salt, and black pepper. Bring to a gentle simmer.
  6. Cover the skillet and let it cook on low heat for about 25 minutes, or until the vegetables are tender.
  7. Once cooked, stir in the fresh dill and parsley, adjusting seasoning if necessary.
  8. Serve warm or at room temperature, drizzling with a little extra olive oil if desired.
