Ingredients
- Large potatoes - 2
- Olive oil - 4 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Black olives - 100 grams, pitted and sliced
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then poke several holes in each potato using a fork.
- Wrap each potato in aluminum foil and place them on a baking sheet. Bake in the preheated oven for about 45-50 minutes, or until tender.
- While the potatoes are baking, prepare the filling. In a mixing bowl, combine diced red and green bell peppers, sliced black olives, halved cherry tomatoes, chopped parsley, salt, black pepper, and lemon juice. Mix well.
- Once the potatoes are done, remove them from the oven and carefully unwrap the foil. Cut each potato in half lengthwise, creating an opening for the filling.
- Drizzle 2 tablespoons of olive oil over each potato half, then spoon the vegetable mixture generously into the potato halves.
- Finish with an additional drizzle of olive oil on top and serve warm.
