- Zucchini - 1 medium, diced

- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
- Cilantro - 1 tablespoon, chopped (for garnish)
Steps
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the diced red bell pepper and zucchini, cooking for 5-7 minutes until they begin to soften.
- Add the halved cherry tomatoes, salt, black pepper, paprika, and chili flakes (if using). Stir well and cook for another 5 minutes until the tomatoes are soft.
- Reduce the heat to low and stir in the lemon juice and chopped parsley. Cook for an additional 2 minutes.
- Remove from heat and let it cool slightly before serving.
- Garnish with chopped cilantro and serve warm or at room temperature.
