  • Zucchini - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Cilantro - 1 tablespoon, chopped (for garnish)

Steps

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the diced red bell pepper and zucchini, cooking for 5-7 minutes until they begin to soften.
  4. Add the halved cherry tomatoes, salt, black pepper, paprika, and chili flakes (if using). Stir well and cook for another 5 minutes until the tomatoes are soft.
  5. Reduce the heat to low and stir in the lemon juice and chopped parsley. Cook for an additional 2 minutes.
  6. Remove from heat and let it cool slightly before serving.
  7. Garnish with chopped cilantro and serve warm or at room temperature.
