- Fine bulgur - 100 grams
- Hot water - 150 milliliters
- Olive oil - 3 tablespoons
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Green onion - 2, finely chopped
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Pomegranate molasses - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a mixing bowl, place the fine bulgur and pour the hot water over it. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and softens.
- After the bulgur is ready, fluff it with a fork and add the olive oil, pomegranate molasses, lemon juice, salt, and black pepper. Mix well.
- Add the diced tomato, cucumber, green onion, parsley, and mint to the bulgur mixture. Gently toss everything together until well combined.
- Taste and adjust seasoning if necessary, then let the salad sit for a few minutes to allow the flavors to meld.
