Ingredients

  • Fine bulgur - 100 grams
  • Hot water - 150 milliliters
  • Olive oil - 3 tablespoons
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Green onion - 2, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Pomegranate molasses - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, place the fine bulgur and pour the hot water over it. Cover and let it sit for about 10 minutes until the bulgur absorbs the water and softens.
  2. After the bulgur is ready, fluff it with a fork and add the olive oil, pomegranate molasses, lemon juice, salt, and black pepper. Mix well.
  3. Add the diced tomato, cucumber, green onion, parsley, and mint to the bulgur mixture. Gently toss everything together until well combined.
  4. Taste and adjust seasoning if necessary, then let the salad sit for a few minutes to allow the flavors to meld.
