- Green beans - 200 grams, trimmed
- Extra virgin olive oil - 4 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Fresh dill - 2 tablespoons, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Water - 100 ml
Steps
- In a pot, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional 1 minute until fragrant.
- Stir in the diced tomato and cook for 3-4 minutes until softened.
- Add the trimmed green beans, salt, black pepper, and water to the pot. Mix well.
- Cover the pot and let it simmer for about 15 minutes, or until the green beans are tender but still vibrant in color.
- Remove from heat, stir in the fresh dill and lemon juice, and drizzle with the remaining 2 tablespoons of olive oil.
- Serve warm or at room temperature, garnished with extra dill if desired.
