Ingredients

  • Green beans - 200 grams, trimmed
  • Extra virgin olive oil - 4 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Fresh dill - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 100 ml

Steps

  1. In a pot, heat 2 tablespoons of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  3. Stir in the diced tomato and cook for 3-4 minutes until softened.
  4. Add the trimmed green beans, salt, black pepper, and water to the pot. Mix well.
  5. Cover the pot and let it simmer for about 15 minutes, or until the green beans are tender but still vibrant in color.
  6. Remove from heat, stir in the fresh dill and lemon juice, and drizzle with the remaining 2 tablespoons of olive oil.
  7. Serve warm or at room temperature, garnished with extra dill if desired.
