Ingredients
- Artichokes - 2 medium, cleaned and halved
- Olive oil - 4 tablespoons
- Lemon juice - 2 tablespoons
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 ml
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced carrot and potato to the pot, stirring occasionally for about 5 minutes.
- Add the halved artichokes to the pot, followed by the lemon juice, salt, and black pepper. Stir gently to combine.
- Pour in the water and bring to a simmer. Cover the pot and let it cook for 25-30 minutes, or until the artichokes are tender.
- Once cooked, remove from heat and stir in the chopped dill and parsley.
- Serve warm or at room temperature, drizzling with extra olive oil if desired.
