Ingredients

  • Artichokes - 2 medium, cleaned and halved
  • Olive oil - 4 tablespoons
  • Lemon juice - 2 tablespoons
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 200 ml

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced carrot and potato to the pot, stirring occasionally for about 5 minutes.
  4. Add the halved artichokes to the pot, followed by the lemon juice, salt, and black pepper. Stir gently to combine.
  5. Pour in the water and bring to a simmer. Cover the pot and let it cook for 25-30 minutes, or until the artichokes are tender.
  6. Once cooked, remove from heat and stir in the chopped dill and parsley.
  7. Serve warm or at room temperature, drizzling with extra olive oil if desired.
