Ingredients

  • Cherry tomatoes - 200 grams
  • Cucumber - 1 medium (approximately 150 grams)
  • Bell pepper (red or yellow) - 1 medium (approximately 150 grams)
  • Kalamata olives - 100 grams
  • Feta cheese - 100 grams
  • Extra virgin olive oil - 4 tablespoons (60 ml)
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Wash the cherry tomatoes and cucumber under cold water. Halve the cherry tomatoes and slice the cucumber into thin rounds.
  2. Remove the seeds from the bell pepper and cut it into small, bite-sized pieces.
  3. In a mixing bowl, combine the halved cherry tomatoes, sliced cucumber, bell pepper pieces, and Kalamata olives.
  4. Crumble the feta cheese over the vegetable mixture.
  5. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the vegetable and feta mixture, and gently toss to combine.
  7. Sprinkle the chopped fresh parsley on top for added flavor and freshness.
