Ingredients

  • Black olives - 100 grams
  • Green olives - 100 grams
  • Cherry tomatoes - 100 grams
  • Cucumber - 1 medium (about 150 grams)
  • Bell pepper (any color) - 1 medium (about 150 grams)
  • Radishes - 6 small
  • Fresh parsley - 20 grams
  • Fresh dill - 10 grams
  • Extra virgin olive oil - 2 tablespoons (30 ml)
  • Lemon - 1 small (for juice)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the black and green olives under cold water to remove excess brine, then pat them dry with a paper towel.
  2. Slice the cherry tomatoes in half, the cucumber into rounds, and the bell pepper into thin strips.
  3. Trim the radishes and cut them into quarters.
  4. Finely chop the fresh parsley and dill.
  5. In a mixing bowl, combine the olives, cherry tomatoes, cucumber, bell pepper, radishes, parsley, and dill.
  6. Drizzle the extra virgin olive oil and squeeze the juice of the lemon over the salad mixture.
  7. Season with salt and black pepper to taste, then gently toss everything together to combine.
  8. Transfer the Zeytin Tabağı to a serving platter and enjoy fresh with bread or on its own.
