  • Black olives, pitted and finely chopped - 100 grams
  • Garlic, minced - 1 clove
  • Fresh parsley, chopped - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let it rise for 30 minutes.
  4. While the dough rises, prepare the olive topping by mixing chopped olives, minced garlic, parsley, red pepper flakes, and lemon juice in a bowl.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, divide it into two equal portions and roll each into an oval shape on a floured surface, about 1 cm thick.
  7. Place the rolled dough on a baking sheet lined with parchment paper. Spread the olive mixture evenly over the top of each pide.
  8. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
