- Warm water - 100 ml

- Active dry yeast - 1 teaspoon
- Sugar - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black olives, pitted and finely chopped - 100 grams
- Garlic, minced - 1 clove
- Fresh parsley, chopped - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let it rise for 30 minutes.
- While the dough rises, prepare the olive topping by mixing chopped olives, minced garlic, parsley, red pepper flakes, and lemon juice in a bowl.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions and roll each into an oval shape on a floured surface, about 1 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spread the olive mixture evenly over the top of each pide.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Remove from the oven and let cool slightly before slicing and serving.
