Ingredients

  • Short-grain rice - 50 grams
  • Water - 500 milliliters
  • Coconut sugar - 100 grams
  • Saffron strands - 0.5 grams
  • Cardamom powder - 0.5 teaspoons
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 2 tablespoons
  • Almonds (sliced) - 30 grams
  • Pistachios (finely chopped) - 20 grams
  • Cinnamon powder - for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed rice and 500 milliliters of water. Bring to a boil, then reduce the heat to low and cover, cooking for about 20 minutes until the rice is tender.
  3. Once the rice is cooked, stir in the coconut sugar, saffron strands (soaked in a tablespoon of warm water), cardamom powder, and vanilla extract.
  4. In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Slowly add this slurry to the rice mixture while stirring continuously to prevent lumps.
  5. Cook for an additional 5-10 minutes on low heat, stirring constantly until the mixture thickens to a pudding-like consistency.
  6. Remove from heat and let it cool slightly before pouring it into serving bowls.
  7. Refrigerate for at least 2 hours to set.
  8. Before serving, garnish with sliced almonds, chopped pistachios, and a sprinkle of cinnamon powder.
