Ingredients
- Short-grain rice - 50 grams
- Water - 500 milliliters
- Coconut sugar - 100 grams
- Saffron strands - 0.5 grams
- Cardamom powder - 0.5 teaspoons
- Vanilla extract - 1 teaspoon
- Cornstarch - 2 tablespoons
- Almonds (sliced) - 30 grams
- Pistachios (finely chopped) - 20 grams
- Cinnamon powder - for garnish
Steps
- Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.
- In a medium pot, combine the rinsed rice and 500 milliliters of water. Bring to a boil, then reduce the heat to low and cover, cooking for about 20 minutes until the rice is tender.
- Once the rice is cooked, stir in the coconut sugar, saffron strands (soaked in a tablespoon of warm water), cardamom powder, and vanilla extract.
- In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Slowly add this slurry to the rice mixture while stirring continuously to prevent lumps.
- Cook for an additional 5-10 minutes on low heat, stirring constantly until the mixture thickens to a pudding-like consistency.
- Remove from heat and let it cool slightly before pouring it into serving bowls.
- Refrigerate for at least 2 hours to set.
- Before serving, garnish with sliced almonds, chopped pistachios, and a sprinkle of cinnamon powder.
