- Eggs - 4 large

- Red bell pepper - 1 medium, chopped
- Green bell pepper - 1 medium, chopped
- Tomato - 2 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a medium skillet over medium heat.
- Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the chopped red and green bell peppers and sauté for 5 minutes until they soften.
- Add the diced tomatoes, paprika, salt, and black pepper, and cook for another 5 minutes until the tomatoes break down and form a sauce.
- Make four small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from heat and sprinkle with chopped fresh parsley before serving.
