Ingredients

  • Eggs - 4 large
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, chopped
  • Green bell pepper - 1 medium, chopped
  • Tomato - 2 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the chopped red and green bell peppers and sauté for 5 minutes until they soften.
  5. Add the diced tomatoes, paprika, salt, and black pepper, and cook for another 5 minutes until the tomatoes break down and form a sauce.
  6. Make four small wells in the sauce and crack an egg into each well.
  7. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  8. Remove from heat and sprinkle with chopped fresh parsley before serving.
