Ingredients
- Long-grain rice - 150 grams
- Chicken breast, diced - 200 grams
- Yufka (Turkish flatbread) - 2 sheets
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Chicken broth - 300 milliliters
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Paprika - 1 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced chicken breast to the skillet, cooking until the chicken is browned and cooked through, about 7-10 minutes.
- Stir in the soaked rice, salt, black pepper, and paprika. Mix well to coat the rice with the oil and spices.
- Pour the chicken broth over the rice mixture, bringing it to a simmer. Cover the skillet and reduce the heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, preheat the oven to 200°C (400°F).
- Once the rice is done, remove it from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
- On a baking tray, lay one sheet of yufka and spoon half of the rice mixture onto the center. Fold the edges of the yufka over the filling to form a parcel. Repeat with the second sheet and remaining rice.
- Brush the top of the yufka parcels with a little olive oil and bake in the preheated oven for 10-12 minutes until golden and crispy.
- Remove from the oven, garnish with chopped parsley, and serve immediately.
