Ingredients

  • Long-grain rice - 150 grams
  • Chicken breast, diced - 200 grams
  • Yufka (Turkish flatbread) - 2 sheets
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Chicken broth - 300 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced chicken breast to the skillet, cooking until the chicken is browned and cooked through, about 7-10 minutes.
  4. Stir in the soaked rice, salt, black pepper, and paprika. Mix well to coat the rice with the oil and spices.
  5. Pour the chicken broth over the rice mixture, bringing it to a simmer. Cover the skillet and reduce the heat to low. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. While the rice is cooking, preheat the oven to 200°C (400°F).
  7. Once the rice is done, remove it from the heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. On a baking tray, lay one sheet of yufka and spoon half of the rice mixture onto the center. Fold the edges of the yufka over the filling to form a parcel. Repeat with the second sheet and remaining rice.
  9. Brush the top of the yufka parcels with a little olive oil and bake in the preheated oven for 10-12 minutes until golden and crispy.
  10. Remove from the oven, garnish with chopped parsley, and serve immediately.
