Ingredients

  • Fresh green beans - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Seaweed (nori or dulse) - 1 tablespoon, crumbled
  • Vegetable broth - 250 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash and trim the ends of the green beans, then cut them into 2-inch pieces.
  2. In a medium-sized pot, heat the olive oil over medium heat.
  3. Add the chopped onion and sauté for about 5 minutes until translucent.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the diced tomatoes and cook for about 5 minutes until they soften.
  6. Mix in the crumbled seaweed and stir well.
  7. Pour in the vegetable broth and bring the mixture to a simmer.
  8. Add the green beans, salt, and black pepper. Cover and cook for about 15 minutes, or until the beans are tender but still crisp.
  9. Remove from heat and stir in the fresh parsley.
