- Fresh green beans - 300 grams
- Olive oil - 2 tablespoons

- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Seaweed (nori or dulse) - 1 tablespoon, crumbled
- Vegetable broth - 250 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Wash and trim the ends of the green beans, then cut them into 2-inch pieces.
- In a medium-sized pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomatoes and cook for about 5 minutes until they soften.
- Mix in the crumbled seaweed and stir well.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Add the green beans, salt, and black pepper. Cover and cook for about 15 minutes, or until the beans are tender but still crisp.
- Remove from heat and stir in the fresh parsley.
