Ingredients

  • Zucchini - 200 grams
  • Red bell pepper - 150 grams
  • Eggplant - 200 grams
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the grill or BBQ to medium-high heat.
  2. Slice the zucchini, red bell pepper, and eggplant into 1 cm thick slices.
  3. In a large bowl, combine olive oil, minced garlic, lemon juice, chopped parsley, chopped mint, salt, black pepper, cumin, and paprika to create the marinade.
  4. Add the sliced vegetables to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
  5. Place the marinated vegetables on the grill and cook for 5-7 minutes on each side, or until they are tender and have nice grill marks.
  6. Remove the vegetables from the grill and let them rest for a couple of minutes before serving.
  7. Serve warm, garnished with additional fresh herbs if desired.
