- Zucchini - 200 grams
- Red bell pepper - 150 grams
- Eggplant - 200 grams
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat the grill or BBQ to medium-high heat.
- Slice the zucchini, red bell pepper, and eggplant into 1 cm thick slices.
- In a large bowl, combine olive oil, minced garlic, lemon juice, chopped parsley, chopped mint, salt, black pepper, cumin, and paprika to create the marinade.
- Add the sliced vegetables to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
- Place the marinated vegetables on the grill and cook for 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Remove the vegetables from the grill and let them rest for a couple of minutes before serving.
