- Black pepper - 1/2 teaspoon
- Vegan sausage (chopped) - 100 grams
- Tomato (diced) - 1 medium
- Bell pepper (diced) - 1/2 medium
- Red onion (finely chopped) - 1/2 medium
- Fresh parsley (chopped) - 2 tablespoons
- Nutritional yeast - 2 tablespoons
Steps
- In a bowl, mix warm water and active dry yeast, let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour, salt, smoked paprika, cumin, and black pepper.
- Add the yeast mixture and olive oil to the dry ingredients and knead until a soft dough forms, about 5-7 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, heat a pan over medium heat and sauté the red onion until translucent.
- Add the chopped vegan sausage, tomato, and bell pepper to the pan, cooking for another 5-7 minutes until softened.
- Stir in the chopped parsley and nutritional yeast, mixing well before removing from heat.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal parts and roll each piece into an oval shape on a floured surface.
- Place the rolled-out dough on a baking sheet lined with parchment paper.
- Spoon the vegan sausage mixture onto the center of each dough oval, leaving edges clear.
- Fold the edges of the dough over the filling to create a boat shape and pinch to seal.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven, let cool for a few minutes, and serve warm.
