Ingredients

  • All-purpose flour - 250 grams
  • Active dry yeast - 7 grams
  • Warm water - 150 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegan sausage (chopped) - 100 grams
  • Tomato (diced) - 1 medium
  • Bell pepper (diced) - 1/2 medium
  • Red onion (finely chopped) - 1/2 medium
  • Fresh parsley (chopped) - 2 tablespoons
  • Nutritional yeast - 2 tablespoons

Steps

  1. In a bowl, mix warm water and active dry yeast, let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour, salt, smoked paprika, cumin, and black pepper.
  3. Add the yeast mixture and olive oil to the dry ingredients and knead until a soft dough forms, about 5-7 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
  5. While the dough is rising, heat a pan over medium heat and sauté the red onion until translucent.
  6. Add the chopped vegan sausage, tomato, and bell pepper to the pan, cooking for another 5-7 minutes until softened.
  7. Stir in the chopped parsley and nutritional yeast, mixing well before removing from heat.
  8. Preheat your oven to 220°C (428°F).
  9. Once the dough has risen, divide it into two equal parts and roll each piece into an oval shape on a floured surface.
  10. Place the rolled-out dough on a baking sheet lined with parchment paper.
  11. Spoon the vegan sausage mixture onto the center of each dough oval, leaving edges clear.
  12. Fold the edges of the dough over the filling to create a boat shape and pinch to seal.
  13. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
  14. Remove from the oven, let cool for a few minutes, and serve warm.
