Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Chickpeas - 100 grams, cooked and mashed
  • Olives - 50 grams, finely chopped
  • Tomato - 1 medium, diced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, mix warm water and yeast. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Create a well in the center and pour in the yeast mixture and olive oil.
  3. Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. In a separate bowl, combine mashed chickpeas, smoked paprika, ground cumin, black pepper, red pepper flakes, nutritional yeast, chopped olives, diced tomato, and parsley. Mix well to form a filling.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
  7. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the filling evenly onto each dough, leaving a small border around the edges.
  8. Fold the edges of the dough over the filling, pinching to seal and create a boat shape.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  10. Remove from the oven and let it cool slightly before slicing. Serve warm.
