Vegan Sucuk Pide

- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Ground cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Nutritional yeast - 2 tablespoons
- Chickpeas - 100 grams, cooked and mashed
- Olives - 50 grams, finely chopped
- Tomato - 1 medium, diced
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, mix warm water and yeast. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Create a well in the center and pour in the yeast mixture and olive oil.
- Knead the dough for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- In a separate bowl, combine mashed chickpeas, smoked paprika, ground cumin, black pepper, red pepper flakes, nutritional yeast, chopped olives, diced tomato, and parsley. Mix well to form a filling.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
- Place the rolled dough on a baking sheet lined with parchment paper. Spoon the filling evenly onto each dough, leaving a small border around the edges.
- Fold the edges of the dough over the filling, pinching to seal and create a boat shape.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool slightly before slicing. Serve warm.
