- Vital wheat gluten - 100 grams
- Chickpea flour - 30 grams
- Sun-dried tomatoes - 50 grams, finely chopped
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Vegetable broth - 150 ml
- Liquid smoke - 1 teaspoon
Steps
- In a large mixing bowl, combine the vital wheat gluten and chickpea flour.
- Add the chopped sun-dried tomatoes, garlic powder, onion powder, paprika, cumin, black pepper, salt, and red pepper flakes. Mix well to combine all dry ingredients.
- In a separate bowl, mix the vegetable broth, olive oil, and liquid smoke.
- Gradually pour the wet ingredients into the dry ingredients, stirring until a dough forms.
- Knead the dough for about 5 minutes until it becomes elastic and smooth.
- Divide the dough into 2 equal portions and shape each portion into a sausage link.
- Wrap each sausage tightly in aluminum foil, twisting the ends to secure.
- Bring a pot of water to a boil and carefully lower the wrapped sausages into the water. Boil for 20 minutes.
- Remove the sausages from the water and let them cool slightly before unwrapping.
- Grill the sausages on a BBQ or grill pan over medium-high heat for about 5-7 minutes, turning occasionally until they are browned and have grill marks.
- Serve hot with your favorite vegan dips or in a sandwich.
