Ingredients

  • Vital wheat gluten - 100 grams
  • Chickpea flour - 30 grams
  • Sun-dried tomatoes - 50 grams, finely chopped
  • Olive oil - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Vegetable broth - 150 ml
  • Liquid smoke - 1 teaspoon

Steps

  1. In a large mixing bowl, combine the vital wheat gluten and chickpea flour.
  2. Add the chopped sun-dried tomatoes, garlic powder, onion powder, paprika, cumin, black pepper, salt, and red pepper flakes. Mix well to combine all dry ingredients.
  3. In a separate bowl, mix the vegetable broth, olive oil, and liquid smoke.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring until a dough forms.
  5. Knead the dough for about 5 minutes until it becomes elastic and smooth.
  6. Divide the dough into 2 equal portions and shape each portion into a sausage link.
  7. Wrap each sausage tightly in aluminum foil, twisting the ends to secure.
  8. Bring a pot of water to a boil and carefully lower the wrapped sausages into the water. Boil for 20 minutes.
  9. Remove the sausages from the water and let them cool slightly before unwrapping.
  10. Grill the sausages on a BBQ or grill pan over medium-high heat for about 5-7 minutes, turning occasionally until they are browned and have grill marks.
  11. Serve hot with your favorite vegan dips or in a sandwich.
