- Large baking potatoes - 2
- Olive oil - 2 tablespoons
- Vegan shrimp (or other seafood alternative) - 200 grams
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Cherry tomatoes - 100 grams, halved
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them with a fork several times. Rub with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45 minutes, or until tender.
- While the potatoes are baking, heat a tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the diced red bell pepper and zucchini to the skillet and cook for about 5-7 minutes, until they are tender.
- Stir in the vegan shrimp and cherry tomatoes, cooking for another 5 minutes until heated through. Season with lemon juice, paprika, salt, and black pepper to taste. Remove from heat.
- Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently fluff the insides with a fork.
- Fill each potato with the vegetable and vegan shrimp mixture, ensuring an even distribution.
- Garnish with freshly chopped parsley and serve warm.
