Ingredients

  • Seitan - 200 grams
  • Pita bread - 2 pieces
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 200 grams
  • Smoked paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegan yogurt - 150 grams
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add minced garlic and cook for another 1-2 minutes until fragrant.
  4. Stir in the tomato paste, canned diced tomatoes, smoked paprika, cumin, salt, and black pepper, and let the mixture simmer for 10 minutes.
  5. While the sauce simmers, slice the seitan into thin strips and toss it with the remaining tablespoon of olive oil.
  6. In another pan, sear the seitan strips over medium-high heat until golden brown, about 5 minutes.
  7. Cut the pita bread into quarters and arrange them on a baking dish.
  8. Layer the seared seitan on top of the pita, followed by the tomato sauce mixture.
  9. Bake in the preheated oven for 10 minutes.
  10. Serve hot, drizzled with vegan yogurt and garnished with fresh parsley.
