- Seitan - 200 grams
- Pita bread - 2 pieces

- Tomato paste - 2 tablespoons
- Canned diced tomatoes - 200 grams
- Smoked paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegan yogurt - 150 grams
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (390°F).
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the tomato paste, canned diced tomatoes, smoked paprika, cumin, salt, and black pepper, and let the mixture simmer for 10 minutes.
- While the sauce simmers, slice the seitan into thin strips and toss it with the remaining tablespoon of olive oil.
- In another pan, sear the seitan strips over medium-high heat until golden brown, about 5 minutes.
- Cut the pita bread into quarters and arrange them on a baking dish.
- Layer the seared seitan on top of the pita, followed by the tomato sauce mixture.
- Bake in the preheated oven for 10 minutes.
- Serve hot, drizzled with vegan yogurt and garnished with fresh parsley.
