Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 100 ml
  • Active dry yeast - 7 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Chopped fresh parsley - 30 grams
  • Chopped spinach - 50 grams
  • Chopped onion - 50 grams
  • Garlic powder - 2 grams
  • Ground cumin - 2 grams
  • Sesame seeds - 10 grams (for topping)

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour, salt, olive oil, and the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover, and let rise for 30 minutes in a warm place.
  4. While the dough is rising, prepare the filling. In a skillet, sauté chopped onions in a bit of olive oil until translucent. Add chopped spinach, parsley, garlic powder, black pepper, and ground cumin. Cook for another 5 minutes, then set aside to cool.
  5. Once the dough has doubled in size, punch it down and divide it into two equal portions. Roll each portion into a circle about 20 cm in diameter.
  6. Place half of the filling on one half of each circle, leaving a border. Fold the other half over and press the edges to seal. You can crimp the edges for a decorative touch.
  7. Preheat the oven to 180°C (350°F). Place the çörek on a baking sheet lined with parchment paper. Brush the tops with olive oil and sprinkle sesame seeds on top.
  8. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.
