Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Red bell pepper - 1 medium, finely chopped
  • Onion - 1 small, finely chopped
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Tomato paste - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan cheese - 50 grams (optional)

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a pan over medium heat. Add chopped onion and bell pepper, sautéing for 5 minutes until softened.
  5. Add sliced mushrooms, spinach, tomato paste, smoked paprika, cumin, and black pepper. Cook for an additional 5-7 minutes until the vegetables are tender. Stir in chopped parsley and remove from heat.
  6. Preheat the oven to 220°C (428°F) and line a baking sheet with parchment paper.
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape on a floured surface.
  8. Place the rolled dough onto the prepared baking sheet. Spoon the vegetable mixture onto the center of each dough oval, leaving space around the edges.
  9. Fold the edges of the dough over the filling, pinching to secure and create a boat shape.
  10. If using, sprinkle vegan cheese on top of the filling.
  11. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  12. Remove from the oven, let cool slightly, and serve warm.
