Ingredients

  • Firm tofu - 200 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Press the tofu to remove excess moisture, then cut it into 2 cm cubes.
  2. Chop the red bell pepper, zucchini, and red onion into similar-sized pieces (about 2 cm).
  3. In a mixing bowl, combine olive oil, soy sauce, lemon juice, garlic powder, smoked paprika, black pepper, and salt to create the marinade.
  4. Add the tofu and chopped vegetables to the marinade, stirring gently to coat them evenly. Let it marinate for at least 15 minutes.
  5. Preheat the grill or barbecue to medium-high heat.
  6. Thread the marinated tofu and vegetables onto the soaked skewers alternately, leaving a bit of space between each piece.
  7. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the vegetables are tender and slightly charred.
  8. Remove the skewers from the grill and serve hot with a side of rice or flatbread.
