- Lemon juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu to remove excess moisture, then cut it into 2 cm cubes.
- Chop the red bell pepper, zucchini, and red onion into similar-sized pieces (about 2 cm).
- In a mixing bowl, combine olive oil, soy sauce, lemon juice, garlic powder, smoked paprika, black pepper, and salt to create the marinade.
- Add the tofu and chopped vegetables to the marinade, stirring gently to coat them evenly. Let it marinate for at least 15 minutes.
- Preheat the grill or barbecue to medium-high heat.
- Thread the marinated tofu and vegetables onto the soaked skewers alternately, leaving a bit of space between each piece.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and serve hot with a side of rice or flatbread.
