Ingredients
- Nori sheets - 4
- Short-grain rice - 100 grams
- Water - 200 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic, paprika, and red pepper flakes, and cook for an additional 1-2 minutes until fragrant.
- Stir in the rice and toast for 1-2 minutes, then add the water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed.
- Once the rice is cooked, remove from heat and let it cool slightly. Fluff with a fork and mix in the chopped dill, parsley, lemon juice, and toasted pine nuts. Adjust seasoning with salt and black pepper to taste.
- Cut the nori sheets into quarters. Place a tablespoon of the rice mixture onto each nori piece and fold to create a pocket, sealing the edges with a bit of water if necessary.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Place the nori pockets seam side down and cook for 2-3 minutes until crispy and golden.
- Serve warm, garnished with additional herbs and a drizzle of lemon juice.
