Ingredients

  • Zucchini - 200 grams
  • Carrot - 100 grams
  • Chickpea flour - 50 grams
  • All-purpose flour - 30 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Non-dairy milk - 50 ml

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Grate the zucchini and carrot using a box grater and place them in a large mixing bowl.
  3. Add the chickpea flour, all-purpose flour, chopped parsley, chopped dill, garlic powder, cumin, salt, black pepper, baking powder, olive oil, and non-dairy milk to the bowl.
  4. Mix all the ingredients thoroughly until well combined and a thick batter forms.
  5. Spoon the mixture onto the prepared baking sheet, forming small fritters, and flatten them slightly.
  6. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy on the outside.
  7. Remove from the oven, allow to cool slightly, and serve warm, garnished with additional herbs if desired.
