- Zucchini - 200 grams
- Carrot - 100 grams
- Chickpea flour - 50 grams
- All-purpose flour - 30 grams
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Garlic powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Non-dairy milk - 50 ml
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchini and carrot using a box grater and place them in a large mixing bowl.
- Add the chickpea flour, all-purpose flour, chopped parsley, chopped dill, garlic powder, cumin, salt, black pepper, baking powder, olive oil, and non-dairy milk to the bowl.
- Mix all the ingredients thoroughly until well combined and a thick batter forms.
- Spoon the mixture onto the prepared baking sheet, forming small fritters, and flatten them slightly.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy on the outside.
