Ingredients
- Silken tofu - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Tomatoes - 400 grams, diced (or canned)
- Red pepper flakes - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegan yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced tomatoes, red pepper flakes, paprika, salt, and black pepper to the skillet. Stir well and let it simmer for about 10 minutes, allowing the sauce to thicken.
- While the sauce is simmering, prepare the silken tofu. Gently drain the tofu and cut it into thick slices.
- Once the sauce is ready, pour half of it into a baking dish. Place the sliced tofu over the sauce, then cover with the remaining sauce.
- Bake in the preheated oven for about 15 minutes.
- While the tofu is baking, prepare the vegan yogurt by mixing it with lemon juice, salt, and chopped parsley.
- Remove the dish from the oven, and serve topped with the vegan yogurt mixture and additional chopped cilantro if desired.
