Ingredients

  • Silken tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Tomatoes - 400 grams, diced (or canned)
  • Red pepper flakes - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegan yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced tomatoes, red pepper flakes, paprika, salt, and black pepper to the skillet. Stir well and let it simmer for about 10 minutes, allowing the sauce to thicken.
  4. While the sauce is simmering, prepare the silken tofu. Gently drain the tofu and cut it into thick slices.
  5. Once the sauce is ready, pour half of it into a baking dish. Place the sliced tofu over the sauce, then cover with the remaining sauce.
  6. Bake in the preheated oven for about 15 minutes.
  7. While the tofu is baking, prepare the vegan yogurt by mixing it with lemon juice, salt, and chopped parsley.
  8. Remove the dish from the oven, and serve topped with the vegan yogurt mixture and additional chopped cilantro if desired.
