- young green jackfruit - 400 grams, drained and rinsed
- sea salt - 1 teaspoon

- lemon juice - 2 tablespoons
- rice vinegar - 1 tablespoon
- nori sheets - 2, cut into small squares
- smoked paprika - 1 teaspoon
- black pepper - 1/2 teaspoon
- dill - 1 tablespoon, chopped
- parsley - 1 tablespoon, chopped
- red onion - 1 small, thinly sliced
- cucumber - 1 small, diced
- tomato - 1 medium, diced
Steps
- In a bowl, combine the drained jackfruit, sea salt, olive oil, lemon juice, rice vinegar, smoked paprika, and black pepper. Mix well and let it marinate for at least 15 minutes.
- While the jackfruit is marinating, prepare the salad by mixing the diced cucumber, tomato, and sliced red onion in a separate bowl. Add chopped dill and parsley, and toss with a drizzle of olive oil and a pinch of salt.
- After marinating, heat a non-stick skillet over medium heat. Add the marinated jackfruit and cook for 10-15 minutes, stirring occasionally until the edges start to brown and it becomes tender.
- Once cooked, remove the jackfruit from heat and let it cool slightly. Flake the jackfruit with a fork to create a fish-like texture.
- To serve, place the flaked jackfruit on a plate and garnish with nori squares. Serve alongside the fresh salad.
