Ingredients

  • Whole wheat flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Red lentils - 100 grams
  • Onion - 1 medium, finely chopped
  • Bell pepper - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. In a bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine whole wheat flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes in a warm place.
  4. Meanwhile, rinse the red lentils under cold water and cook them in a saucepan with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender. Drain and set aside.
  5. In a skillet over medium heat, sauté onion and garlic in a bit of olive oil until translucent. Add bell pepper and cook for another 3-4 minutes.
  6. Stir in cooked lentils, tomato paste, paprika, cumin, salt, and black pepper. Cook for 5 minutes, then remove from heat and stir in chopped parsley.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal portions. Roll each portion into a thin circle, about 25 cm in diameter.
  9. Place the rolled dough on a baking sheet lined with parchment paper. Spread the lentil mixture evenly over the surface of each dough circle.
  10. Bake in the preheated oven for 10-12 minutes until the edges are crispy.
  11. Serve hot with lemon wedges on the side for squeezing over the top.
