Ingredients

  • young green jackfruit - 400 grams, drained and rinsed
  • onion - 1 medium, finely chopped
  • garlic - 3 cloves, minced
  • carrot - 1 medium, diced
  • red bell pepper - 1 medium, diced
  • tomato paste - 2 tablespoons
  • vegetable broth - 250 ml
  • olive oil - 2 tablespoons
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • bay leaf - 1
  • fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
  3. Add the diced carrot and red bell pepper to the skillet and cook for another 5 minutes until they soften.
  4. Stir in the tomato paste, ground cumin, ground coriander, smoked paprika, salt, and black pepper, cooking for another 2 minutes to combine the flavors.
  5. Add the drained jackfruit to the skillet, breaking it apart gently with a fork or spoon, and mix thoroughly with the vegetable mixture.
  6. Pour in the vegetable broth and add the bay leaf. Bring to a simmer, then remove from heat.
  7. Transfer the jackfruit mixture to a baking dish, spreading it evenly. Cover with foil.
  8. Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10 minutes to allow for caramelization.
  9. Remove from the oven and let it sit for 5 minutes. Garnish with fresh parsley before serving.
