- young green jackfruit - 400 grams, drained and rinsed
- onion - 1 medium, finely chopped
- garlic - 3 cloves, minced
- carrot - 1 medium, diced
- red bell pepper - 1 medium, diced
- tomato paste - 2 tablespoons
- vegetable broth - 250 ml
- olive oil - 2 tablespoons
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- bay leaf - 1
- fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
- Add the diced carrot and red bell pepper to the skillet and cook for another 5 minutes until they soften.
- Stir in the tomato paste, ground cumin, ground coriander, smoked paprika, salt, and black pepper, cooking for another 2 minutes to combine the flavors.
- Add the drained jackfruit to the skillet, breaking it apart gently with a fork or spoon, and mix thoroughly with the vegetable mixture.
- Pour in the vegetable broth and add the bay leaf. Bring to a simmer, then remove from heat.
- Transfer the jackfruit mixture to a baking dish, spreading it evenly. Cover with foil.
- Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10 minutes to allow for caramelization.
- Remove from the oven and let it sit for 5 minutes. Garnish with fresh parsley before serving.
