- Large russet potatoes - 2
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegan yogurt - 4 tablespoons
- Chickpeas (cooked or canned) - 1 cup
- Corn (canned) - 1/2 cup
- Diced cucumber - 1/2 cup
- Diced tomatoes - 1/2 cup
- Chopped parsley - 1/4 cup
- Lemon juice - 1 tablespoon
- Red onion (finely chopped) - 1/4 cup
- Paprika - 1/2 teaspoon
- Tahini - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Scrub the potatoes under running water and pat them dry.
- Pierce each potato several times with a fork, then rub them with olive oil and sprinkle with salt and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-50 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, prepare the toppings: in a bowl, mix the chickpeas, corn, diced cucumber, diced tomatoes, parsley, lemon juice, red onion, paprika, and tahini. Stir well to combine and season with salt and pepper to taste.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes.
- Cut a slit down the center of each potato and gently fluff the insides with a fork, adding a tablespoon of vegan yogurt to each potato.
- Spoon the prepared topping mixture generously into each potato and serve immediately.
